The Easiest Slow Cooker Chicken Tacos

As the director of the Drama Club at my school, my busiest time of the year falls between January and March when we rehearse and perform our show. These are the months that I heavily rely on slow cooker meals to keep us well fed and avoid the temptation and ease of getting take out. I have never been one of the people that has scheduled repeated menus, such as tacos on Tuesdays, but during drama season, chicken tacos become a pretty frequent flyer. 

These slow cooker chicken tacos are so easy. Even though I usually do all the cooking, this is a meal that Cole can confidently prepare for us when I am too busy to throw dinner together. He preps it in the morning, and by the time I come home from work, all I have to do is shred the chicken with a fork before preparing a quick meal and running back to rehearsal. If we make this meal when I have a little more time, I will usually prepare some Queso Dip to pour over the tacos too. Realistically, even the Queso can be a go-to for hectic nights though, seeing as it can be whipped up in 20 minutes. If your family is always on the go, you are going to love this recipe. I promise, it is delicious and a major lifesaver for a chaotic schedule.


2 lb Boneless Skinless Chicken Breast

1 cup Water

1 tsp Better than Bouillon Roasted Chicken Base

2 tbsp Taco Seasoning

Taco Fixings of Your Choice


1. Pour the water, lime juice, and bouillon in the bottom of the slow cooker.

2. Divide the taco seasoning evenly among all the chicken and rub it into the meat.

3. Place the coated chicken in the slow cooker, set on low and cook for 6-8 hours.

4. Use two forks to break apart and shred the chicken. Feel free to let it soak in the flavors more, or serve right away. 

Kitchen Tip: If you try to shred the chicken after only 6 hours and it isn’t easily breaking apart, put the lid back on the cooker and leave it for a little while longer. 

These are seriously the easiest tacos you could ever dream of making. There is very little prep, and the chicken gets so tender from roasting in the slow cooker all day. For a perfect combination of flavors, serve this up with my Queso Dip and either Slow Cooker Jalapeno Black Beans or Frijoles!
